The gum is essentially the bacteria’s cell wall surface, which is removed through a complex enzymatic process. The bacteria are fed glucose and minerals during the fermentation process. When the mixture is finished, it is pasteurised to kill the bacteria. The outer skin is then removed via a sequence of liquid enzyme reactions, resulting in a solid substance. After that, the gum is washed, dried, and milled into a fine powder.
