Pig Butchering – August 12, 2023
Come see Team Canada butchering team member Elyse Chatterton take down a pig! In partnership with the Pitmasters from You Need a BBQ, we will break down and cook an amazing Alberta free run pig. In this class we explore the anatomy and common (plus less common) cuts of an Alberta raised pig. Elyse uses traditional English line butchering to show you how to break down a pig from beginning to end without the use of any power tools. We will get to eat some of the meat from the pig that we cook with a focus on the loins, belly, ribs and tenderloin.
Elyse represented Canada in Sacramento at the World Butchering Challenge as a team captain in 2022. Elyse’s role on the team was that of a “finisher” meaning that her job is to make and present butcher counter quality cuts. She has worked locally at a number of local These half day classes run from 9am-1pm and we promise in that time you will get all you can eat BBQ, a couple of licensed beverages if you’re over 18 and a chance to hang out with a group of people who love BBQ as much as you do. This class does not require any equipment or special tools, but instead gives you the chance to watch our pitmasters and butchers at work while taking lots of notes and pictures to practise later at home.
